Avocado Tuna Salad Recipe
Delicious Avocado Tuna Salad
Servings: Makes enough tuna salad for 2 portions
Ingredients•
1 5-ounce can tuna fish (Safe Catch brand Albacore)
3/4 of ripe avocado, roughly chopped
1/2 cup minced celery
1 green onion thinly sliced, including green tops (or red onion can be substituted)•
2 teaspoons lemon juice
1 teaspoon lemon zest
2 Tbsp chopped fresh cilantro or parsley
1/2 teaspoon kosher salt
Freshly ground black pepper
Steps
1 Place all of the ingredients in a medium bowl. Mix with a wide tined fork, mash the avocado and break up the chunks of tuna as you go, until the ingredients are well combined.
2 Add more salt and pepper if necessary, and serve in a cassava flour tortilla, organic romaine lettuce wraps, or have with Siete lime chips
